Lemon Bundt Cake

Ingredients

  • 2-3 Lemons
  • 2 cups Self Raising flour
  • 2 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 1/2 cup granulated sugar
  • 3 Large eggs
  • 1 tsp Vanilla extract
  • 1/2 cup Sour Cream
  • Black berries for topping Optional
  • 1/2 cup vegetable oil
  • Mascrapone

Step 1: Mix the Dry Ingredients

In a bowl, whisk together the flour, baking powder, sugar, and salt.

Step 2: Mix the Initial Wet Ingredients

In a separate bowl, combine a little more sugar, lemon juice, and eggs. Whisk well until the mixture is smooth.

Step 3: Add the Oil

Pour in the oil and whisk again. Don’t worry if the mixture starts to separate, just keep whisking and it will come together nicely.

Step 4: Combine Everything

Add the wet ingredients to the bowl of dry ingredients and whisk until well combined. A hand whisk works well here. Once smooth, fold in the sour cream. This gives the cake extra moisture and enhances the flavour in the most subtle way.

Step 5: Prepare and Bake

Line a bundt pan with oil and a light dusting of flour. This is a must, don't skip this step or your cake will stick to the pan and you won't get the nice shape. Pour the batter in and smooth the top. Bake until golden and a toothpick or skewer comes out clean. If the top is not baking as fast, towards the end of the bake cover the pan with foil for a few minutes. 

The Mascarpone Cream

This frosting is light, airy, and not overly sweet. Perfect for those who prefer a more balanced frosting. Mascarpone is a soft Italian cheese similar to cream cheese but lighter in texture and milder in flavour. It creates the perfect base for a gentle citrus cream. You can adjust the sweetness and citrus levels to your liking. A touch of lemon zest or vanilla pairs beautifully.
Whip everything together until soft and spreadable. Chill slightly before using if you want a firmer texture.
Once the cake has cooled down, you may add your cream and fruit.
